This gives them the opportunity to spend a few hours building an app, creating mockups and graphics, and preparing financial statements. Afterwards, they can upload their work and code to a repository where it can be reviewed and tested. This approach can be helpful in selecting the most qualified candidate if you're only looking to hire one person.
